Our wine originates in Sabbione, in the municipality of Reggio Emilia, on the estate surrounding Villa Davoli.
This is where the Tresinaro stream once flowed, which is why the soil is fertile and the microclimate is unique.
The ancellotta is a grape with a high polyphenol content, so much so that even its pulp has an intense colour.
Despite its high anthocyanin content, it makes for a very delicate grape.

INDELEBILE
The secret and power of INDELEBILE is the drying of the ancellotta grapes, which allows the concentration of colour and the development of 15 degrees alcohol. The tannins are intense and enveloping, leaving a truly indelible taste persistence.
The notes of red fruit, cherry jam and dark chocolate blend to create a sensation of warmth that will warm your soul.

The notes are of red little fruits, like rasperry, bluberries and other small fruits, mixed with the barrel ageing process, so Vanilla and toasted parfums that will warm your heart.
Impossibile is produced organically respecting the integrity of the grape and its components, this combined with the high polyphenol content allows its organoleptic characteristics to remain stable over time.

Impossibile is a medium power wine that is excellent for Aperitivo, and pasta with wild boar , ragu' or Bolognese Lasagna. It is also reccomended with cheeses, and grilled meat.
The medium Body of Impossibile is very flexible for all kind of meals while some time to enjoy friends and loves of your life.

Infinito is a wine that surprised first and foremost those of us who produced it. It is amazing how our grapes are able to express themselves in this wine.
Its intense straw yellow colour and its floral and fruity bouquet left us speechless.
The notes of apricot and peach are very clear and invite immediate tasting, its savouriness and salinity leave a pleasant sensation on the palate.

BALSAMIC VINEGAR
Appreciated for its taste structure, which it is able to give to any recipe, balsamic vinegar has a truly eclectic flavour, making it perfect for important pairings as well as for quick, unpretentious preparations.
Our balsamic vinegar is special, you can already tell by its intense purple colour, and is the result of years of experimentation that continues to this day. The production process is long and the maturation in barriques, which previously housed our Indelebile wine, is indispensable to obtain the special taste sensation that sets it apart. Our vinegar is low in acid, rather sweet and very pleasant on the palate. It contains no added sugar and is made only from grapes of the Ancellotta variety, a characteristic that makes it extremely digestible and appreciated by young and old alike.

The very limited acidity is never invasive and makes it perfect with fresh vegetables, meat and why not, even fruit.
Balsamic vinegar can be used raw, or added after cooking, especially if it is used to enhance the flavour of red meat, grilled fish or pork.

By discovering it little by little, we will no longer be able to do without it to make creamy risottos with a rounded flavour, and fresh or mouth-watering desserts. Perfect for gourmet dishes, it is preferably used when the food is cooked, so as not to waste the rich heritage of flavours and aromas that make it unique.

VILLA DAVOLI
Our wine is born in Sabbione, in the municipality of Reggio Emilia, on the estate surrounding Villa Davoli.
The brand takes its name from the Villa Davoli that stands on the estate, intended as a holiday home for Aristide Davoli's family and an admirable example of early 20th century rationalism. Situated in the Reggio Emilia countryside and designed by architect Bottoni, it was purchased together with the surrounding estate in 1970.
